- 3 c finely chopped zucchini
- 1 egg
- Salt and pepper to taste.
- ½ c flour
- 1 t baking powder
Combine the zucchini, egg and salt/pepper. Sift the flour and baking powder together over the zucchini mixture.
Drop by ¼ cupfuls on a lightly oiled griddle and cook until brown on both sides.
Serve with melted butter, grated parmesan cheese, or sour cream.
